According to Friendly Fantail, their pumpkin soup recipe makes a fabulous nourishing soup, that will leave you some leftover for lunch unless you decide to eat it all at once! 

Ingredients

  • 1-2 tablespoons of olive oil (take a look at these NZ made options)
  • 2 medium brown onions (chopped) 
  • 10 or so cloves of garlic (crushed and chopped)
  • 6 large celery stems (chopped)
  • 1 large butternut pumpkin (skin and seeds removed, chopped into small chunks)
  • 1 litre of chicken or vegetable stock
  • Water to top up the stock if needed
  • 1 teaspoon of ground cumin powder
  • 1 teaspoon of ground coriander powder
  • Ground pepper and sea salt to taste (this NZ made gourmet sea salt will elevate any meal
  • Parsley (roughly chopped)
  • Two teaspoons of Friendly Fantail Organic Turmeric Latte (or Friendly Fantail Turmeric & Chilli Latte mix or Friendly Fantail Turmeric Chai Latte mix)

Friendly Fantail Soup

Method

  1. On a low to medium heat, heat the oil and soften the onions.
  2. Add the garlic and celery and cook until the garlic’s raw smell disappears. The goal is to soften the onion, not brown it.
  3. Add 2 teaspoons of Friendly Fantail Turmeric Latte mix and allow it to simmer a little with the softened garlic and celery.
  4. Add the pumpkin and stock. The liquid should be up near the top of the pumpkin. Add some water if more liquid is required. Cover the pot and simmer until the pumpkin is tender.
  5. Remove from the heat and use a stick blender to blend until it is lovely and smooth.
  6. Garnish with parsley.
