Gluten Free Custard Apple Scrolls

Ingredients

  • 350g Spicy Fruit Mix
  • 150g Wholesome Breadmix
  • 65g sugar or coconut sugar
  • 12g gluten free yeast
  • 5g gluten free baking powder
  • 100mls milk
  • 60g butter
  • 1 tsp vanilla
  • 400 mls cold water


For the crosses

  • 300mls milk
  • 30g butter
  • 30g sugar
  • 30g maize cornflour
  • 2 tsp vanilla essence
  • 1 egg, beaten
  • 1 apple, cored, pealed and cut in 1cm cubes

Method

  1. Heat the milk, butter and sugar until the butter has melted. Add the water and mix well.
  2. In a large bowl, mix together the Wholesome and Spicy Fruit Breadmixes, yeast and baking powder and make a well in the centre.
  3. Add the milk mixture, mix to combine. 
  4. Tip onto a flour surface or silicone mat and knead together.
  5. Divide into two equal portions. Rollout to 35cm x 25cm, keep dusting with flour if its starts to stick. Do not roll too thin, keep it about 8mm thick. Repeat. 


    To make the custard

    1. In a pot mix the milk, sugar, butter, cornflour, over a gentle heat warm up until the sugar has dissolved, keep gentle stirring and add in the vanilla and egg. Keep stirring while it thickens. It should be the consistency of yoghurt, but not as thick as sour cream.
    2. Set aside, it will thicken as it cools.
    3. Place the diced apples in a pot and over a gentle heat sweat the apples to soften them, you may need to add a teaspoon or two of water. The apples should be soft and still in shape. 
    4. Spread the custard on the dough and sprinkle the apples.
    5. Roll the dough tightly from the longest edge to form a cylinder. Cut into 4-5cm pieces.
    6. Line a round baking dish with baking paper and place the scrolls evenly around, with a 2cm gap between scrolls.
    7. Cover with a warm cloth and leave to rise in a warm space. Once risen, bake in a hot oven, 180 degree for 25 minutes - check on them after 20 minutes in case they are cooked.
