Hi, I am Clare, founder and chief baker at Fudge & James. When I started F&J in 2019, I planned it to be a traditional baking business using wheat flour as that is what I have always worked with. Unfortunately, I was diagnosed with Coeliac disease in December 2019. No more wheat for me. I had a choice to make. Should I continue to bake with wheat flour and risk my heath or should I diversify and undertake the huge challenge of learning how to bake without gluten. Obviously I chose the latter and Fudge & James #2 was born. Baking without traditional wheat flour is challenging but full of possibility and potential. I am learning and getting inspired every day and I am so thrilled that coeliacs, gluten sensitives and people who have no issue with gluten at all are enjoying our products. I can’t wait to add more products to our range so watch this space.
